FLUFFY POTATO CASSEROLE 
2 c. mashed potatoes (hot or cold)
1 lg. pkg. cream cheese
1 onion, chopped
2 eggs
2 tbsp. flour
1 can French fried onions
Salt & pepper to taste

In a large mixing bowl, beat potatoes, cream cheese, onions, eggs and flour. Beat until light and fluffy. Add salt and pepper. Put in casserole dish. Top with French fried onions. Bake, uncovered, for 35 minutes in moderate oven (about 300 degrees).

This recipe can be made a day ahead and is also an excellent way to use leftover potatoes.
