PEGGY'S SPANISH RICE 
1/2 lb. bacon
1 c. uncooked rice (not instant)
4 c. water
1 c. canned, diced tomatoes
1/2 c. bell pepper, chopped
1-2 tsp. chili powder
1-2 tsp. garlic powder
1/2 tsp. cumin
1 tsp. salt
1 tsp. pepper

Cook bacon until crisp. Reserve drippings in pan. Keep drippings hot and add uncooked rice. Stir until all rice is coated in drippings. Stir in tomatoes and add water. Season with chili powder, garlic powder, cumin, salt, and pepper. Cover and bring to a rapid boil. reduce heat and cook for 10 minutes. Add bell pepper and cover. Cook until all water is absorbed, about 20-25 minutes. Yield: 6 servings.
