ARMADILLO EGGS | |
2 lbs. Jimmy Dean regular sausage 1 to 1 1/2 lbs. regular or mild cheddar cheese, grated 2 (12 oz.) cans pickled Jalapeno peppers, seedless, stemless 1/2 lb. sharp cheddar cheese, grated Mix sausage and regular or mild cheddar. If peppers are not cut, cut lengthwise and remove seeds and stems. Stuff peppers with sharp cheese. Pat out a scoop of meat mixture and wrap around peppers, shape like an egg. Bake on a rack (like a broiler pan rack) at 350 degrees for 30 minutes or until meat is cooked. May be served hot or cold. Freezes well. When ready to serve, slice in 1/4 inch slices. |
