TEXAS ARMADILLO EGGS 
2 c. shredded Montery Jack cheese
8 oz. hot sausage
15 jalapeno peppers, seeded
1 pkg. Shake n Bake for pork
1 1/2 c. baking mix
Cheese
Eggs, beaten

Preheat oven to 325 degrees. Combine 2 cups cheese and sausage in bowl; mix well with fingers. Add baking mix 1/3 at a time, mixing well after each addition; mixture will be stiff. Stuff peppers with cheese. Pat sausage mixture into circles 2 inches in diameter and 1/4 inch thick. Place 1 pepper on each circle. Wrap to enclose pepper completely; pressing edges to seal and shaping to resemble egg. Roll in Shake n Bake. Dip in beaten eggs, then roll in Shake n Bake again. Place on baking sheet. Bake for 20 to 25 minutes or until brown. Yield: 15 servings.
