THREE CHEESE MANICOTTI | |
1 (8 oz.) can tomato sauce 1 env. spaghetti sauce 1 1/2 c. water 1 c. grated mozzarella cheese 1 c. creamed cottage cheese 1/2 c. Parmesan cheese 2 eggs, beaten 1/4 c. chopped parsley 1/2 tsp. salt 1/8 tsp. pepper 8 manicotti shells Blend tomato sauce, spaghetti sauce and water. Simmer, uncovered 10-12 minutes. Combine the 3 cheeses, add eggs, parsley, salt and pepper. Mix lightly. Stuff about 1/4 cup of the cheese mixture in each cooked and drained shell. Pour 1/2 cup of the sauce into a 12 x 7 inch baking dish. Arrange manicotti in dish. Pour remaining sauce over shells. Bake uncovered at 350 degrees for 35-40 minutes or until bubbly. Makes 6 servings. |
