POSH SQUASH 
2 lbs. zucchini or yellow squash
2 eggs
1 sm. onion, chopped
1/4 green pepper
1 c. mayonnaise
1 c. Parmesan cheese
Bread crumbs
Salt & pepper

Cook squash until tender; drain. Beat eggs well and add onion, green pepper, mayonnaise, cheese, salt and pepper. Fold in the squash. Top with bread crumbs and bake at 350 degrees for 30 minutes.
