RICOTTA CAKE 
2 lbs. Ricotta cheese
3/4 c. sugar
3 eggs, slightly beaten
1 (18 1/2 oz.) pkg. cake mix with pudding
Cool Whip (garnish)
Lemon slices (garnish)

Beat 3 to 4 minutes: cheese, sugar and eggs. Set aside. Prepare cake by package directions and pour into greased and floured 13"x9" pan. Spoon Ricotta mixture over batter evenly. Bake 60 to 65 minutes at 350 degrees. Cool completely.
