RICOTTA CAKE 
2 lbs. ricotta cheese
3/4 c. sugar
3 eggs, lightly beaten
1 (1 lb. 2.5 oz.) pkg. cake mix with pudding
Powdered sugar

Mix cheese, sugar and eggs. Prepare cake mix according to directions and pour into a greased and floured 13 x 9 pan. Carefully spoon ricotta over batter. Bake at 350 degrees for 60 to 65 minutes or until done. Cool on rack. Sprinkle with powdered sugar, cut in squares.

Lemon flavored or yellow works best, chocolate can be used but it doesn't come out with definite layering, (but it does taste good).

I've been making this cake for years and love it, however I have found I now need to buy 2 boxes of cake mix and weigh them to get the right measurement. The box mix is no longer as big as it once was so the recipe needs adjustment. Didn't realize this last Easter and it did not come out right.
