CRACKER PUDDING 
1 qt. milk
15 saltine crackers, crushed
1/2 c. chopped coconut (optional)
1 c. sugar
2 beaten egg yolks
1 tsp. vanilla
2 beaten egg whites

Cook first 4 ingredients until boiling. Pour some of this over beaten yolks. Mix, return to saucepan and cook until mixture thickens, stirring constantly. Add vanilla and pour into ovenproof bowl.

Make meringue of the 2 egg whites, add 2 tablespoons sugar. Cover pudding and brown in oven. Good warm or cold.
