CHICKEN ADOBO WITH PINEAPPLE 
3 lb. chicken, cut up
1/2 c. vinegar
1 tbsp. salt
1/4 tsp. pepper
1 sm. bay leaf
3 cloves garlic, minced
1/4 c. water
1 c. drained pineapple tidbits
1 med. tomato, quartered

Place first 7 ingredients in a pot and simmer covered for 30 minutes or until chicken is tender. Add tomato and pineapple and cook uncovered until liquid is reduced to half. Serve hot with rice.
