ZUCCHINI AND PASTA SUPPER DISH 
1 1/2 tbsp. olive oil
1 large clove garlic, minced
2 medium zucchini, sliced
1 large onion, sliced and broken into rings
2 medium tomatoes, quartered
1/4 tsp. salt
1/4 tsp. basil leaves
1/4 tsp. oregano
dash of pepper
1 c. shredded Mozzarella cheese
1/2 lb. thin spaghetti, cooked and drained according to directions
2 tbsp. butter
1/4 c. grated Parmesan cheese

Heat olive oil in a large skillet. Add minced garlic and stir-fry until garlic just begins to turn brown. Add zucchini and onion and sauté over medium heat until crisp-tender. Add tomatoes, salt, basil, oregano and pepper; cover and cook for 3 to 5 minutes. Remove from heat; sprinkle with Mozzarella cheese. Cover and let sit for 3 to 4 minutes or until cheese melts. Toss spaghetti with butter and Parmesan cheese; arrange on a large platter (heated if possible). Top with vegetable mixture and serve immediately.

Makes 4 to 5 servings.

A loaf of hot garlic bread is really all you need for a satisfying supper. For a heartier meal, add 1/2 pound Italian sausage that has been cut into 1-inch chunks, sautéed and drained. Add the cooked sausage with the tomatoes and seasonings.
