LEMON TART 
5 whole eggs
1 c. sugar
5 lemons' juice and grated rind
3 tbsp. unsalted butter, melted and cooled
1 pre-baked sweet butter pie crust dough

Whip together the eggs and sugar using whisk until well blended. Add the lemon juice and grated rind. Stir in the melted butter while continuing to whisk.

Pour into a pre-baked butter crust and bake for about 20 minutes in a 350 degree oven. Garnish with thin slices of lemon. Serve hot or cold.
