TART LEMON SQUARES 
6 tbsp. butter, softened
1/4 c. powdered sugar
1 c. + 3 tbsp. unsifted flour
3 eggs
1 c. granulated sugar
1/4 c. lemon juice
Powdered sugar

Preheat oven to 350 degrees. Combine butter, powdered sugar and 1 cup flour in a food processor. Process until blended, about 10 seconds. Pat dough into even layer on bottom of 9" square baking pan. Bake dough in oven for 15 minutes until lightly browned.

Meanwhile, combine eggs, granulated sugar, lemon juice and remaining 3 tablespoons flour in food processor. Process until well mixed. Pour lemon mixture until well mixed.

Bake for 15 to 20 minutes or until firm. Cool on rack. Sprinkle with powdered sugar while warm. Cut into squares when cool. Easy to double recipe.
