TART LEMON SQUARES 
9 tbsp. butter, softened
3/8 c. confectioners' sugar
1 1/2 c. flour
4 lg. eggs
1 1/2 c. granulated sugar
4 1/2 tbsp. flour
Grated rind of 1 lemon
3/8 c. lemon juice (2-3 lemons)
Confectioners' sugar

Preheat oven to 350 degrees. Combine butter, 10X sugar, and 1 1/2 cup flour in food processor. Process until blended, about 10 seconds. Pat dough into even layer in 9x13 inch pan. Bake dough for 15 minutes, until golden.

Meanwhile, combine eggs, granulated sugar, lemon rind, juice and remaining flour in food processor. Process until well mixed. Pour lemon mixture over hot crust. Bake for 20 minutes until firm. Cool on rack. Sprinkle with 10X sugar and cut into 40 squares when cool. Refrigerate.
