BAKED DEVILED PERCH FILLETS 
1/4 c. Worcestershire sauce
1/4 c. chili sauce
Juice of 2 sm. lemons (about 3 tbsp.)
2 tbsp. steak sauce
1/4 tsp. fresh ground pepper
1/2 tsp. dry mustard
Generous dash cayenne pepper

1/2 c. bread crumbs mixed with 1 tbsp. melted butter 1 to 2 tbsp. butter

In plastic bag in bowl, mix well marinade ingredients. Add fillets and secure bag. Marinate 1/2 hour, turning bag occasionally. Reserving marinade, place fillets in lightly greased 15x10 inch jelly roll pan. Bake on top rack in preheated 425 degree oven until fish almost flakes with fork, about 10 to 15 minutes, brushing occasionally with marinade. Sprinkle fillets with buttered crumbs, dot each with butter, then broil 2 inches from heat at hottest setting until crumbs are golden brown and fish flakes easily with fork, 1 to 2 minutes. Makes 6 servings.
