PEANUT BUTTER OATMEAL BARS 
COOKIE DOUGH:

1/2 c. shortening
1/2 c. granulated sugar
1/2 c. brown sugar
1/3 c. peanut butter
1/2 tsp. vanilla
1 egg
1/4 c. milk
1 c. sifted flour
1/2 tsp. baking soda
1/2 tsp. salt
1 c. quick-cooking oatmeal

Cream together the first 5 ingredients until fluffy. Add egg and 1/4 cup of milk; beat well. Add next 3 ingredients sifted. Beat until well combined. Stir in oatmeal. Spread evenly in a greased 9x13 inch pan. Bake at 350 degrees for 20 minutes. Cool thoroughly.

FROSTING:

2 c. sifted confectioners' sugar
1/4 c. cocoa powder
3 tbsp. butter, melted
2-3 tsp. boiling water
1/2 tsp. vanilla

Sift the confectioners' sugar with the cocoa powder. Quickly stir in the melted butter, boiling water, and vanilla; beat until smooth. Spread quickly and evenly over cooled cookies in pan.

GLAZE:

2 tbsp. butter
1 c. confectioners' sugar
3-4 tsp. milk

Heat and stir 2 tablespoons of butter in a small saucepan until golden brown. Remove from heat. Stir in the 1 cup confectioners' sugar and the 3-4 teaspoons milk. Drizzle over chocolate frosting. Cut into bars. Worth the effort!
