FANCY EGG SCRAMBLE 
1 c. Canadian bacon (4 oz.)
1/4 c. chopped green onion
3 tbsp. butter
12 beaten eggs
1 (3 oz.) jar mushrooms, drained
1 recipe cheese sauce
4 tsp. butter, melted
2 14/ c. soft bread cubes (3 slices)

In large skillet cook bacon and onion in 3 tablespoons butter. Add egg and scramble until just set. Fold mushrooms and cooked eggs into cheese sauce. Turn into 12 x 7 inch dish. Combine melted buttered crumbs, sprinkle on top of eggs. Cover and chill. Bake uncovered at 350 degree for 30 minutes. This is better when chilled for a day.

CHEESE SAUCE:

2 tbsp. butter
2 tbsp. flour
1/2 tsp. salt
1/8 tsp. pepper
2 c. milk
1 c. shredded American cheese

Melt butter, blend in flour, salt, and pepper. Add milk, cook and stir until bubbly. Stir in cheese. Great when you have overnight guests because you can make ahead!!
