PEACH GLAZED CORN BEEF | |
3 lb. piece of corned beef 1 (1 lb. 13 oz.) can peach halves 1/4 c. brown sugar 1/4 c. catsup 2 tbsp. vinegar 2 tsp. prepared mustard Place corned beef in heavy saucepan; add water to cover and bay leaf; simmer 2 1/2 to 3 hours or until meat is tender. Remove from heat and cool meat in cooking liquid. Remove the meat; slice across the grain. Arrange the slices, overlapping in 12 x 7 1/2 x 2 inch baking dish. Drain the peaches, reserving 1/4 cup peach syrup. Arrange peaches around the meat. Combine reserved syrup and remaining ingredients. Pour over meat. Bake in 350 degree oven for 1 hour, basting occasionally. Makes 6 servings. Note: Cook the meat the day ahead; refrigerate overnight. Then it slices easily. |
