PEACH COBBLER | |
3-4 peaches (4 c.) 1/2 c. sugar 1 tbsp. cornstarch 1 tsp. lemon rind 2 tbsp. lemon juice 1/8 tsp. salt 1 tbsp. butter 1 c. biscuit mix 1/2 c. light cream 1 tbsp. sugar Slice peaches. Combine peaches, sugar, cornstarch, salt and lemon juice and rind in pan. Bring to a boil, stirring constantly. Pour into 1 1/2 quart baking dish. Bake in 375 degree oven for 10 minutes. Mix remaining ingredients and drop by teaspoon on peaches. Bake 20 additional minutes. |
