PERFECT PEACH COBBLER 
3 c. sliced fresh or canned peaches
1 tbsp. lemon juice
1 c. flour, sifted
1 c. sugar
1/2 tsp. salt
1 egg, beaten
6 tbsp. butter, melted
1 pt. vanilla ice cream, softened
3/4 tsp. cinnamon

Place peaches on bottom of pan. Sprinkle with lemon juice. Sift together the dry ingredients; add egg, tossing with fork until crumbly. Sprinkle over the peaches. Drizzle with the melted butter. Bake in 10 x 6 inch pan at 375 degrees for 35 to 40 minutes. Top with vanilla ice cream mixed with the cinnamon. Serves 6.
