PEGGY'S SCOTTISH ZUCCHINI BREAD 
3 eggs
1 c. oil
3 c. brown sugar

Beat together. 1/2 tsp. baking soda 1 tsp. vanilla 3 tsp. cinnamon 1/2 tsp. salt 2 tsp. baking powder

Mix above with first part. Blend in: 2/3 c. chopped nuts

Grease and flour 2 loaf pans. Bake 50 to 60 minutes at 350 degrees.
