COCONUT MUFFINS 
2 c. all purpose flour
1 c. sugar
2 tsp. double acting baking powder
1/2 c. unsweetened grated coconut
2 lg. eggs, beaten lightly
1 stick unsalted butter, melted and cooled (1/2 c.)
8 oz. plain yogurt
1/2 tsp. coconut extract

In a bowl, sift together the flour, sugar, and the baking powder and stir in the coconut. In another bowl, stir together the eggs, butter, yogurt, and coconut extract until the mixture is blended well.

Stir the egg mixture into the flour mixture until the mixture is just combined. The batter should be lumpy. Divide the batter among buttered muffin tins and bake the muffins in a preheated 375 degree oven for 25 minutes, or until a cake tester comes out clean. Makes 12 muffins.
