COCONUT MUFFINS 
2 c. flour
1 c. sugar
2 tsp. baking powder
1/2 c. grated coconut
2 lg. eggs
1 stick butter, melted
8 oz. plain yogurt
1/2 tsp. coconut extract

Combine flour, sugar, baking powder, and grated coconut in a bowl and set aside. In another bowl, beat 2 eggs lightly. Add butter to eggs. Add yogurt, coconut extract to eggs and butter. Mix both bowls together. Makes 12 muffins. Bake at 375 degrees for 25 minutes.
