GERMAN RICE
1/2 c. rice
1/2 c. water
1 qt. milk
1 stick cinnamon (about 3")
1/2 tsp. salt
1/3 c. sugar
1 tsp. vanilla

Put rice and water in heavy saucepan, about 3 quart size. Bring to boiling point (no need to boil hard) stirring constantly until water is absorbed. Adjust heat so it won't stick. Then add salt, cinnamon stick and about 3/4 cup of warmed milk. Cook and stir until milk is absorbed. Repeat this process until all milk is used. Then rice should be done.

Add sugar and vanilla. Sugar will thin mixture a little but a few extra minutes of cooking takes care of that. A straight tipped wooden spoon is good to stir with. Sprinkle top with cinnamon and sugar.

This recipe is similar to my oma's recipe which her daughter (my mom) would make us for breakfast as a treat. It warmed our tummies on cold winter days before we had to bundle up and head to school in the 1970s.
