PINEAPPLE BAVARIAN 
1 tbsp. plain gelatin (1 env.)
1/4 c. cold water
1 1/3 c. crushed pineapple
1 c. whipping cream
Juice of 1 lemon (3 tbsp.)
1/4 c. sugar

Soften gelatin in the cold water for 5 minutes. Drain juice from pineapple and heat to boiling; stir in gelatin until dissolved and set aside to cool. Have the cream thoroughly chilled, beat in chilled bowl with rotary beater until fluffy; then add lemon juice and sugar and beat until very stiff. Fold in gelatin mixture and crushed pineapple lightly but thoroughly. Cover and chill in refrigerator until firm.

Makes 5 servings.
