FRUIT FRITTERS 
1 egg
1/2 c. milk
1 tbsp. oil
1 c. crushed pineapples, in own juice, or diced apples, drain juice
1 c. self-rising flour, sifted
1 tbsp. sugar
Oil for deep frying

Beat egg with milk, then stir in the 1 tablespoon of oil and the fruit. Add the flour and sugar, stir until just moistened. Drop by tablespoon into heated oil. Fry for about 4 minutes or until brown and done in the middle. Drain on paper towels. Sprinkle with confectioners' sugar before serving. Serve hot.
