CHEESE PIE 
CRUST:

1 c. flour
2 tbsp. shortening (heaping)
1/2 tsp. salt
2 tbsp. cold water

FILLING:

1 pt. cottage cheese (1/2 can be used)
9 tbsp. sugar
1 tbsp. flour (heaping)
4 eggs, beaten or 1 pkg. egg beaters
1 1/2 c. milk (1/2 can be used)
Dash of salt
Cinnamon

Mix cheese, sugar and flour. Stir until well blended. Add milk and beaten eggs and salt. Sprinkle with cinnamon. Pour into pie shell. Bake 15 minutes at 425 degrees, 30 minutes at 350 degrees. Test - may take longer baking time.
