SPICY MOIST BRAN MUFFINS | |
1 1/2 c. All-Bran 1 c. sour milk 1 tsp. baking soda 5 tbsp. oil 1 c. brown sugar 1 egg 1 tsp. vanilla 1/2 c. molasses 1 1/8 c. flour 1 tsp. baking powder 1/2 tsp. salt 1/2 tsp. nutmeg 1/4 tsp. allspice 1 tsp. cinnamon 1/2 c. raisins (1 tablespoon lemon juice or vinegar in cup and fill with milk to make one cup). Soak first 3 ingredients 5 minutes. Cream oil and sugar, add eggs, vanilla and molasses. Add bran mixture and stir. Sift dry ingredients and add to above mixture. Fold into raisins. Pour into cupcake papered muffin tins. (This will make 18 large). Bake in a preheated 375 degree oven for 20-25 minutes. "These are very moist". |
