HONEY-GLAZED PINEAPPLE BRAN
MUFFINS
 
1 egg
2 tbsp. vegetable oil
2 tbsp. honey
3/4 c. buttermilk
1/4 c. whole wheat flour
1/3 c. all purpose flour
1/4 c. sugar
1 1/2 c. all bran cereal
1/4 tsp. salt
1/4 tsp. baking soda
1/2 tsp. cinnamon
1/2 c. raisins
1 (8 oz.) can crushed pineapple, well drained
1/4 c. honey for glaze

In mixing bowl or food processor mix egg, oil, honey, and buttermilk until blended. Add flours, sugar, bran, salt, baking soda, and cinnamon. Mix just until dry ingredients are moistened. Lightly mix in raisins and pineapple. Fill greased muffin pans 3/4 full. Bake at 400 degrees for 18-20 minutes, and remove from pan. Heat honey in small saucepan. Let sit about 5 minutes to thicken. Brush top of muffins. Easy. Yields 1 dozen. Can be frozen.
