APPLE BUTTER 
12 c. applesauce or pears
4 c. sugar
1 tbsp. cinnamon
1 tsp. allspice
1 tsp. ground cloves
1/2 c. vinegar

Bake, uncovered, in moderate oven about 6 hours. Stir occasionally (about every 2 hours) at 300 degrees.

To make applesauce: Wash, pare, quarter, and core apples. Simmer, covered, in a small amount of water until tender. Press apples through sieve or food mill.
