APPLE RICE BETTIE 
2 c. applesauce
1/2 c. brown sugar
Juice of 1 lemon
1/2 tsp. cinnamon
1/3 c. chopped walnuts
1/4 c. melted butter
2 c. cooked rice
4 graham crackers, rolled into crumbs

Combine applesauce, sugar, lemon juice, cinnamon, walnuts, and melted butter. Spread 1/2 of rice in a shallow, greased baking dish. Cover with 1/2 of the applesauce mixture. Repeat the procedure with remaining rice and applesauce mixture; cover with graham cracker crumbs. Bake at 350 degrees for 15 minutes or until crumbs are brown. May be topped with whipped cream.
