COQUILLE SALMON | |
1 egg 3/4 c. milk 1 c. soft bread crumbs 1 can (1 lb.) salmon or 1 pt. of home canned salmon 1 med. onion, chopped and sauteed in 1 tbsp. butter 1 c. grated med. Bandon cheddar cheese 1 tbsp. lemon juice 1/2 tsp. garlic salt 1 tbsp. dried celery flakes 1/2 c. fine dry bread crumbs mixed with 2 tbsp. butter Beat egg and milk together; add soft bread crumbs. Flake salmon, removing any bones and skin. Combine bread-milk mixture, salmon, onion, cheese, lemon juice, celery flakes and garlic salt. Place in 9 inch square baking pan and top with buttered crumbs. Bake in 350 degree oven for about 30 minutes. |
