TURKISH BULGUR SALAD 
2 c. bulgur (cracked wheat)
1/2 bunch parsley, minced
3 tomatoes, cut small
7 or 8 green onions, sliced
4 or 5 green peppers, cut small
1/2 tsp. ground red pepper
1 tbsp. tomato paste
1 tbsp. mint, dried
1/2 c. olive oil
2 lemons
Salt to taste
Lettuce

Clean bulgur and pour 2 cups boiling water over it. Cover tightly.

Cut vegetables and when bulgur swells in size, add red pepper and tomato paste and salt. Add vegetables and mix well. Add olive oil, juice of the lemon and toss together. Serve on lettuce leaves.
