TOM'S RAW APPLE CAKE 
2 c. sugar
1 c. butter
Pinch of salt
2 eggs
1 c. STRONG coffee
3 c. flour
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. nutmeg
2 c. finely chopped apples
1/2 c. black walnuts or pecans

Cream sugar and butter; add all ingredients except apples and nuts. Mix well. Fold in apples and nuts. Pour into a 9 x 13 inch pan. Bake at 350 degrees for 40 to 45 minutes or until done.
