CHICKEN A LA PIP | |
2 chickens 2 green bell peppers 4 med. onions 6 cloves garlic 1 can whole tomatoes 1 can pizza sauce 6 med. red potatoes 1 lg. can mushrooms or 8 oz. fresh (sliced) 1/4 c. olive oil Parmesan cheese Salt & pepper Cut up chicken (use just legs, thighs, breasts and wings). Salt and pepper chicken and place in large deep pan or roaster. Peel and cut potatoes in half and tuck in and around chicken pieces. Drain mushrooms and place on top of chicken. Cut green peppers and onions in rings and layer on top. Add garlic (minced). Drain tomatoes and break up or crush and place on top. Pour pizza sauce over all. Add little more salt and pepper. Drizzle olive oil over all and shake Parmesan cheese generously over top. Bake, uncovered, at 325 degrees for approximately 2 hours (or until potatoes are cooked). Baste occasionally, but do not stir. Remove from oven and let stand 20-30 minutes before serving. Serve with salad and garlic bread. |
