BEEF AND CHEESE MANICOTTI 
1 lb. ground beef
1 med. onion, chopped
2 c. cottage cheese
2 eggs, beaten
8 oz. Mozzarella cheese
4 oz. sliced mushrooms, fresh
1/2 tsp. pepper
1-2 tsp. oregano, season to own taste
14 oz. tomato sauce
1 (8 oz.) pkg. manicotti shells
1/2 c. grated Parmesan cheese

Fry hamburger and onion. Drain fat. Stir in cottage cheese, Parmesan cheese, mushrooms, 1 teaspoon oregano, pepper, and eggs carefully. Add Mozzarella cheese and set aside. Cook manicotti in boiling water. Add 2 tablespoons cooking oil to water. Cook for 20 minutes. Drain and rinse with cold water. Stuff shells with meat and cheese mixture. Place in 9 x 13 pan (spray with non- stick spray). In a small bowl, mix remaining oregano to tomato sauce. Cover manicotti with sauce. Cover pan with foil and bake for 35 minutes at 350 degrees.
