CHEESE MANICOTTI 
1/4 c. butter
2 tbsp. chopped onion
1/4 c. flour
1/2 tsp. salt
1/8 tsp. pepper
2 c. milk
Dash nutmeg
1 c. Swiss or Muenster cheese, grated

Saute onion in butter. Add flour, salt, pepper and nutmeg. Stir until smooth. Add milk. Heat and stir until consistency is smooth. Bring to boil and simmer 3 minutes. Add Swiss cheese and melt.

FILLING:

2 c. cottage cheese
8 oz. cream cheese
1/4 c. chopped parsley
2 tbsp. chopped onion
1 tsp. salt
1/4 tsp. pepper

Boil 14 manicotti shells in water and dry on paper towels. In large casserole dish pour 1 cup cheese sauce. Fill shells and place in pan. Top with remaining sauce.

TOPPING:

2 tbsp. dry bread crumbs
2 tbsp. grated Parmesan cheese
1/4 tsp. paprika

Sprinkle topping on top of cheese sauce. Bake at 350 degrees for one hour. Serves 8.
