CHEESE MANICOTTII 
2 tbsp. butter
16 oz cottage cheese
1/2 tsp. salt
2 eggs
2 tbsp. fresh parsley, minced
8 oz manicotti
Parmesan cheese

Combine butter, cottage cheese, salt, Parmesan cheese, eggs and parsley.

Fill a large pot 1/2 full with water. Place pot, with lid on burner, turn on high and bring to a boil.

Reduce heat to medium high; add the noodle (manicotti). Leave uncovered. When the manicotti starts to boil, set timer at 7 minutes. Check doneness. Remove from burner, drain and rinse. Fill manicotti with 3 spoonfuls of the cottage cheese mixture.
