MINIATURE CHEESECAKES 
1 box graham cracker crumbs
2 (8 oz.) pkgs. cream cheese, softened
3 egg yolks
3/4 c. sugar

Use small muffin tins. Spray tins with Pam and sprinkle bottoms with graham cracker crumbs. Mix cream cheese, egg yolks, and sugar together; set aside. Beat egg whites until stiff. Fold gently but thoroughly into cheese mixture.

Fill tins 1/2 full. Bake at 350 degrees for 10-15 minutes. Cool. Cakes will fall in center.

FILLING:

3/4 c. sour cream
1 tsp. vanilla
2 1/2 tbsp. sugar
1 can prepared cherry pie filling

Mix sour cream, vanilla and sugar together for filling. Glaze cheesecakes. Top with one cherry from a can of prepared filling.
