OLD FASHIONED POTATO CANDY 
1 med. potato, unpeeled
Peanut butter
Approximately 1 to 2 lb. 10X sugar (depends on the size of potato)

Boil potato until soft; then peel and mash. Add sugar a little at a time until stiff enough to roll flat. Spread surface with peanut butter. Roll into a log form. Wrap in waxed paper. Chill until cool enough to slice.

NOTE: When you start adding the sugar to the potato, the "creates" moisture. Pleas have plenty of 10X sugar on hand to bring it to the right consistency.
