"JENNY'S PICKLED HERRING" 
1 sm. jar Scandia herring
White vinegar
Sugar
Peppercorns
Allspice
Oni on

Mix 1/2 cup white vinegar, 1/4 cup sugar, 1/4 cup water, 6 peppercorns crushed, 6 whole Allspice, crushed. Let stand for 10 minutes. Remove herring bits from jar and discard onions, water, etc. Cut herring bits into 3 or 4 pieces. Slice 2 to 3 red onions thin. Separate onion slices and start with slices on bottom of jar or bowl, then alternate with herring, end with onions on top. Then add vinegar mixture, cover and let stand for a few hours or overnight.
