CHICKEN PARMESAN 
1/2 c. plain dried breadcrumbs
1/4 c. grated Parmesan cheese
6 skinless chicken breasts
1 egg, beaten
1/3 c. oil
1 c. chopped onion
1 tsp. minced onion
1 (28 oz.) can tomatoes
1 (15 oz.) can tomato sauce
1 tsp. sugar
1 1/2 tsp. basil
1/2 tsp. oregano
1 1/2 c. Mozzarella

Combine bread crumbs, 2 tablespoons Parmesan. Dip each filet into egg, then crumbs. Saute onions until tender. Stir in remaining ingredients except cheese. Simmer 20 minutes. Layer 1/2 sauce in 11"x7" pan, then 1 tablespoon Parmesan, then chicken, sauce, then cheeses. Bake at 350 degrees for 35 minutes.
