CHICKEN KIEV 
4 boneless chicken breasts
1 1/2 sticks butter
2 tbsp. chives
2 tbsp. parsley
2 tsp. garlic
1/2 tsp. tarragon
Salt (to taste)
Pepper (to taste)
2 eggs, beaten
3 c. bread crumbs

Pound out chicken breasts until very thin. Mix together butter, chives, parsley, garlic, tarragon, salt and pepper. Chill until hardened. Place equal portions of the butter mixture on the chicken and wrap. Dip each piece of chicken in beaten eggs, then roll in bread crumbs. Refrigerate for 1 hour. Deep fry in oil at 375 degrees for 5 minutes.
