COUNTRY-STYLE CHICKEN KIEV 
2/3 c. sweet butter
1/2 c. bread crumbs
2 tbsp. grated Parmesan
1 tsp. basil
1 tsp. oregano
1/2 tsp. garlic salt
2 chicken breast, split
1/4 c. apple juice
1/4 c. chopped scallions
1/4 c. chopped parsley
1/4 tsp. salt

Preheat oven to 375 degrees. Melt butter in heavy saucepan. Separately, combine bread crumbs, cheese, basil, oregano, garlic salt, and salt. Dip chicken breasts in melted butter, then roll in crumbs to coat. Place skin side up in baking dish. Bake for 50-60 minutes or until chicken is brown and tender. Meanwhile, add juice, green onion and parsley to remaining melted butter, about 1/2 cup. Pour over chicken and bake for a few minutes more until sauce is hot. Serves 4.
