CHICKEN AND NOODLE CASSEROLE -
COUNTRY STYLE
 
8 oz. noodles, cooked and drained
1 chicken (2 1/2 -3 lbs.) cooked and cut up (or turkey pieces)
1/4 c. onion, chopped
1/4 c. green pepper, chopped
1/4 c. celery, chopped
2 tbsp. butter
1 (1 lb.) can tomatoes
1 (4 oz.) can mushrooms
2 tbsp. parsley
1/2 tsp. oregano
Salt and pepper to taste
1/4 lb. Mozzarella cheese, grated
1/2 c. Parmesan cheese, grated
2 cans cream of mushroom soup

Saute onion, green pepper and celery in butter. Add tomatoes, mushrooms, parsley and seasonings. Simmer for 10 minutes. Add mushroom soup - heat.

In 2 1/2 quart casserole - layer noodles, chicken, cheese, repeat. Cover with sauce. Bake at 350 degrees for about 30 minutes.
