CAROLINA COLE SLAW 
1 lg. cabbage, grated
1 med. green pepper, optional (chopped fine)
1 med. onion, chopped fine

DRESSING:

1 c. sugar
1 c. cider vinegar
1 tsp. salt
1 tsp. dry mustard
1 tsp. celery seeds
2/3 c. vegetable oil

Toss cabbage, pepper and onion together. Mix sugar, salt, mustard and celery seed in a small saucepan, add vinegar and oil; let come to a boil over moderate heat, stirring until sugar dissolves. Pour over cabbage mixture and toss well to mix. Cool to room temperature, then cover and refrigerate until ready to use. Even better the longer it sets.
