IT'S BETTER THAN POTATO SALAD | |
2 1/2 c. water 1 c. UNCLE BEN'S® converted brand rice 1 1/2 tsp. salt 1 tbsp. butter 2 c. mayonnaise or salad dressing 2 c. sliced celery 1 med. onion, finely chopped 4 tsp. prepared mustard 4 hard cooked eggs, chopped 8 radishes, sliced 1 cucumber, peeled & diced Bring water to a boil in medium saucepan. Stir in rice, 1 teaspoon of salt and butter. Cover tightly and simmer 20 minutes, remove from heat. Let stand, covered until all water is absorbed, about 5 minutes. Transfer to large bowl. Cover and chill. Stir in mayonnaise or salad dressing, celery, onion, mustard, remaining 1/2 teaspoon salt. Cover and chill thoroughly. Just before serving, stir in eggs, radishes, cucumber. Makes 6 to 8 servings. |
