HOME-ON-THE-RANGE PEPPERONI
PIZZA
 
1/2 c. packaged biscuit mix
1/4 tsp. Italian seasoning
2 tbsp. milk
1 c. shredded Mozzarella cheese (4 oz.)
10 slices pepperoni
1/4 c. chopped green pepper
1/4 c. pizza sauce

In a small mixing bowl combine the biscuit mix and Italian seasoning. With a fork stir in milk all at once just until dough follows fork around the bowl.

On a lightly floured surface knead dough 10 to 12 strokes. Grease a 6" skillet. Press dough over the bottom and 1/2" up the sides of the skillet.

If using a gas range, cook over low heat with lid of skillet ajar for 4 to 6 minutes or until top appears dry.

If using an electric range, cook over medium heat with lid ajar for 4 to 6 minutes or until top appears dry.

Sprinkle 2/3 cup of the cheese over the bottom of the crust. Top with the pepperoni and green pepper. Spoon pizza sauce over all. Top with remaining Mozzarella cheese. If using a gas range cook over low heat with lid ajar for 10 to 15 minutes or until cheese is melted.

If using an electric range, cook over medium heat with lid ajar for 6 to 7 minutes or until cheese is melted. Loosen the sides and bottom of the pizza. Slide it onto a plate. Serves 2.
