YAM SOUFFLE 
Half the recipe is plenty for a family of four.

3 c. cooked mashed yams (4 or 5 med.)

2 eggs, well beaten
1/2 stick butter
1 tbsp. vanilla

TOPPING:

1/2 c. flour
1 c. chopped pecans
1/2 stick butter
1/2 c. maple syrup

Combine until nuts are coated well. Crumble over yams and bake.

Bake at 350 degrees for 45 minutes.
