LOUISIANA YAM SOUFFLE 
3 eggs, beaten fluffy
2 tbsp. light brown sugar
2 tsp. orange peel, grated
1/4 tsp. nutmeg
6 (or so) yams, cooked, peeled, mashed
2/3 c. light cream, milk or can milk
2/3 c. pecans coarsely chopped
6 tbsp. melted butter
Miniature marshmallows
Nut halves for decoration
Cherries for decoration

Use 1 1/2 quart baking dish. Bake at 325 degrees for 50 minutes. May be prepared day before, chill.
